Butternut Squash Soup

Fall, then Winter will be here before you know it. Prepare now by gathering recipes for good, healthy, wholesome, and nutritious soup! Squash is filled with wonderful nutrients and goodness for your body. This Butternut Squash Soup recipe is easy to make and you probably have most of these ingredients already in your kitchen.

Roasted Butternut Squash Soup

Diced Large Butternut Squash
3 Carrots, cut in 1-inch chunks
2-21/2 cups chicken broth
½ Tblsp cinnamon
1/8 tsp ground sage
1/8 tsp nutmeg
Coconut or Olive Oil
Sea Salt and Ground Pepper

Preheat oven to 375.

Roast squash and carrot tossed in a bit of oil, sprinkled with salt 35-45 minutes.

Stir half way through. Remove from oven and let cool slightly.

Using a high-powered blender,  blend the veggies, stock, cinnamon, sage, nutmeg. Adjust the amount of stock as needed. A thick, smooth consistency is the end result.

Amazingly simple and tasty.

Meal suggestion: serve with a green salad and grilled chicken,
or poached salmon.  Or make it a soup and sandwich night.  a Turkey sandwich or grilled cheese sandwich goes well with Butter Nut Squash soup.
